This caviar popular after the Beluga Caviar is traditionally served on blinis or pancakes along with crème fraiche. They are harvested from Ossetra Sturgeon, which weigh between 50 to 400 pounds. Colored between golden to deep brown, they have very rich flavor. Originally found in Russia, it is however being farmed in countries like Iran due to its popularity and rising demand.
