This caviar is harvested from the Beluga Sturgeon fish that reaches 900 kg or more and it takes 20 years to reach maturity for such harvesting. The fish is primarily found in the Caspian sea which is the largest salt water lake. But being an endangered specie, there are heavy restrictions on its fishing, only Iran is allowed to export them since they have effective conservation measures in place. No additions or changes are made to the roe(eggs) since such additions will diminish its value.

The caviar is usually served on toast and maybe handled only using special caviar spoons made of mother of pearls, bone or any other non metallic materials since any metallic spoons will affect its taste.
